I absolutely love this cooking method for Costco's frenched rack of lamb. When the lamb rack is cooked well it might be the absolute best food item in all of Costco.
Oven/Grill/Cast Iron Only 1 of three options are needed for each cooking method

1PackCostco Frenched Rack of Lamb
Salt
Pepper

Instructions
These are 3 separate cooking methods depending on the equipment that you want to use. Please select only one recipe.
Roast/BakePre-heat oven to 400°F. Place a saute pan over high heat and add a little oil. Sear lamb racks then place in the pre-heated oven. Cook lamb until it reaches an internal temperature of 145°F (approximately 16-20 minutes for medium). Remove racks, cover with foil and let it rest for 10-15 minutes.
Grill/BBQPlace Costco lamb rib rack 4 inches from moderate coals rib bones down. Grill for approximately 8-12 minutes per side. Cooking tip: Wrap the rib bones in foil to prevent them from burning.
Pan FryCut the rack into chops by slicing down between the ribs. Place chops into a preheated skillet. Cook over moderate heat for approximately 4 minutes per side.I personally have only tried the Roast/Bake method and the lamb has always turned out wonderful. If it ain’t overcooked, don’t fix it.
