What are Healthy Noodles made of?

Healthy Noodles are imported from Japan and made by a company called Kibun. These noodles are made from Okara, a by-product of tofu, and made with soybean fiber and konjac powder. The noodles can also be referred to as konjac noodles or shirataki noodles.

Healthy noodles from Costco are Sugar Free, Fat Free, Gluten Free, Cholesterol Free, Keto Friendly, and Dairy Free. 

These are perfect for those following a keto lifestyle or low carb diet. Check out the rest of Costco keto foods.

The packaging claims that these Costco Healthy Noodles are versatile and ready to use.

They provide a recipe and some images of the noodles being used in an Italian marinara dish as well as a classic pad thai meal. 

From the images shown, I much prefer the look of the pad thai compared to the marinara dish.

Do Healthy Noodles Have an Odor?

They also include a check mark graphic that states the Healthy Noodles are Ready to Use, Odorless, and Naturally White. The point that sticks out to me is the odorless claim.

I’m glad these don’t have an odor, but I wonder how bad Konjac noodles used to smell or how bad their competitors’ noodles smell.

I feel that odor is such a strong word that I just need to know what compelled them to make this claim in the first place. If anybody is familiar, please share with us all in the comments.

Eating Healthy Noodles for a Keto or Low Carb Diet

Healthy Noodles are a brand of Keto Friendly Konjac noodles and an excellent diet food for those dealing with diabetes, Celiac disease, or anybody who wants to lose weight.

These noodles have only 6 grams of carbohydrates and 0 net grams of carbs per 4-ounce serving compared to typical pasta, which has 28 grams per 4-ounce serving.

The noodles cut out a significant amount of carbs, and in turn, the calories drop from 150 for pasta to 30 calories per serving for Costco Healthy Noodle. 

I will touch more about this in the Nutritional Information and Calories Section.

How much does Healthy Noodle cost at Costco?

Healthy Noodles are available at Costco for $16.49. Each box contains 6 packs which break down to $2.75 per 8-ounce pack. 

This is a premium price compared to traditional pasta or even noodles, but it’s worth the price for those who want healthy low-carb, low calorie, keto friendly noodles.

I did spot this on sale for the first time since I tried the product about a year ago. 

This is a really nice discount of nearly 25% and if you see it on sale, its great opportunity to stock up. 

Where to buy Healthy Noodle? Costco Exclusive!

Healthy Noodle is only sold at Costco. This is a Costco exclusive item and the only shirataki or konjac noodle available at Costco! They can be found in the refrigerated section as seen above.

Kibun, the company that makes Healthy Noodles, sells a similar product Zeromen Noodles all across the country at select Asian markets.

Alternatives to Healthy Noodle

Healthy Noodles are not the only option when it comes to low-carb noodles. They are one of many Konjac or shirataki noodles that are available on the market today. Some of the biggest competitors to Healthy Noodle are Palmini Low Carb Pasta, Al Dente Carba-Nada, and Miracle Noodles.

Miracle Noodle will be the most similar option to Healthy Noodle, but are not available at Costco. The only konjac noodles that Costco sells will be the Healthy Noodle Brand.

Healthy noodles are rather simple to prepare, as they don’t need to be heated, just rinsed with water. 

I’m not sure what we are rinsing off, but I’m going to make sure to rinse them off well.

Pro Tip: Pat the noodles dry after rinsing them in order to not water down the sauce or dressing.

Soft Texture

To say the least, the texture is different. The noodles do not taste or feel like traditional pasta or egg noodles, but instead are very soft and mushy.

They have a unique texture, and I hate to say it, but the healthy noodles feel very unnatural to me.

Healthy Noodles Lack in Flavor

For taste, they are very bland. They take on whatever sauce or dressing you use, which is nice, but the noodles themselves don’t provide much flavor.

I followed the recommended recipes from the box and made a marina dish as well as a spicy peanut sauce noodle dish.

I made an easy marinara pasta dish for my first experience with Healthy Noodles from Costco.
 
I opted against using a pricey bottle of Rao’s marinara sauce and chose a simple pasta sauce instead.

After eating many spaghetti and ground beef meatball dishes over the years, the texture of the Healthy Noodles is so different from traditional pasta that it threw me off quite a bit.

I Didn't Enjoy These Noodles - Texture Issues

To speak candidly, I really didn’t enjoy this. My body’s natural reflex was to gag as soon as I started chewing the noodles. 

Whenever I took a normal-sized bite, my body wanted to reject the Healthy Noodles. When I shrunk the bite size to a mini portion, I was able to take them down without a problem.

I may have an issue with vegan/plant-based foods. I really didn’t care much for the texture of those items either (Impossible Burger,  Morningstar Veggie Patties). I don’t think this is a Healthy Noodle issue, but an issue for me with shirataki and konjac noodles.

Aside from the major texture issue, I had another minor problem with the noodles’ wateriness. After rinsing them off, I threw the noodles into a warm pot of marinara sauce. 

Some of that water was transferred into the marinara and did make the dish a little soupy.

We Really Tried to Make it Work

My wife went with a homemade spicy peanut Healthy noodle dish and had the same issue that I did. The texture didn’t sit well with her, and she didn’t even finish her meal.

I’m not sure if we got a bad batch or maybe this box of Healthy Noodles from Costco was left out of refrigeration or something, but we just can’t eat these noodles.

Healthy Noodles seem pretty popular online, so it makes me wonder why my wife and I had such a bad experience with them. 

Regardless, we had to throw out the remaining packets.

Healthy Noodle Cooking Instructions

One nice thing about Costco’s Healthy Noodles is that they truly are easy to prepare. 

The noodles can be eaten hot or cold, and to prepare them, you simply cut open the package, rinse the noodles off with water, drain and serve.

Excellent Nutritional Profile & Calories - Great Diet Food! (Keto Friendly)

This is where the noodles shine. Shirataki noodles are meant to be a healthy alternative to traditional noodles, and I think Kibun did a great job. One serving of Costco Healthy Noodles is 4 ounces or half a packet.

This is one of the best nutritional profiles that I have seen at Costco. The 6 grams of fiber negate the 6 grams of carbohydrates which brings the net carbs down to zero! 

This is a keto friendly meal and you can eat 8 ounces of food for a total of 60 calories. 

Easy to Make Low Calorie Meals with Healthy Noodle

If you were to combine the noodles with a low-calorie sauce and a healthy protein such as chicken breast, you could potentially eat a large meal for 500 calories or less!

Healthy Noodles are a great low calorie option if you like the taste and texture.

They are an even greater diet food if you don’t like the taste or texture, as you’ll take just a few bites and have no desire to eat for the rest of the day.

Before I purchased the box of Costco Healthy Noodles, I wasn’t sure what exactly they were. After researching the noodles, eating them, and writing this post, I still don’t know what they are made of. I’ll just post the ingredient list here and let you all decipher this.

*adds a negligible amount of sugar and contains a small amount of calories.

Can you freeze healthy noodles from Costco?

Kibun, the makers of Healthy Noodle, don’t recommend freezing the noodles as it would change the texture and water content. 

I think the noodles might benefit from going through a freezing and defrosting cycle if it helps remove some of the water and harden the noodles. I don’t have the stomach to give it a try, but if any of you do, please let me know in the comments how it tastes after being frozen.

Final Thoughts

I’ll start by saying that I’m aware that I’m not the intended target for Costco Healthy Noodles. If I had a health need for a low-carb, low-calorie noodle then I think my outlook might change, but as of now I don’t care for these Healthy Noodles one bit.

There is no taste, and the texture feels unique but unnatural. There is just something about these Healthy Noodles from Costco that just doesn’t sit right with me.

If you do have the need for Healthy Noodles, the price seems right at Costco, and the nutritional profile is excellent, fantastic, amazing.

I love these noodles! Only one problem. They don't sale them at all locations. I have to drive 30min out to farther Costco locations. Why? I just want to buy it at my local location. It would make it so much easier...

As a consumer of both pasta and rice noodles looking to reduce total daily carb intake I find these a great pantry option. Took about two tries to understand how to cook with them, they add a little extra moisture to the stir fry. We particularly like the soft texture. Give them a whirl.

This is one of my favorite Costco items. I usually eat a full packet for dinner (2 servings) which is only a total of 60 calories. I cook them in olive oil and add garlic and other spices, some vegetables, a bit of chicken, and Parmesan cheese. It’s a great and filling low-calorie meal. The noodles by themselves have little flavor, but with the right spices and complements, it’s delicious and healthy.

These are amazing!!!!! I have used them to make pad thai and meatballs and spaghetti. If you are watching your carbs they are a great alternative. To me, they are worth the money! Only problem is they fly out of the warehouse. Hard to get.

I like these noodles. They are very, very soft - kind of like overcooked pasta. However, since I don’t like firm pasta, this is not a problem for me. I have had these with marinara sauce, pesto and even warmed them through with some garlic and butter and then added some cooked shrimp to it. All good!

I absolutely love these noodles and eat them all the time but unfortunately I haven't been able to find them at Costco lately.. I asked customer service and they said they have been discontinued and I'm very upset about it. These noodles make eating low carb possible because they actually mimic a real noodle. I like this option to replace traditional noodles. They take on the flavor I add, either Italian, Thai, or Mexican. My only comment is that I like to pat them dry, to remove some moisture, otherwise the sauce gets a bit wetter than I like. It’s a learning curve, and well worth the effort to learn to use this product.

  1. I loved the Healthy Noodles. I’ve been looking for something like this for weight loss. I love pasta. I made a stir fry and loved it. The noodles are a little soft, but I was fine with that!

    1. I love this product. I just started and I haven’t followed their recipes at all. I microwave asian type vegetables ( snow peas, mushrooms, spinach, bean sprouts ) cut fine covered in a bowl with or without water, till veggies are as cooked as I like then add the noodles and heat through. Add part of a broth cube to taste mashing it on the side of the bowl. Simple and delicious.
      Pasta alone is supposed to taste neutral. These noodles are a bit like Japanese rice noodles which I used to eat because of a wheat sensitivity.

  2. followed directions for noodle prep, then added to cold peanut sauce. turned to MUSH – really GROSS! Did not retain any original shape but turned into a flavorless, gelatinous mass. Ended up throwing it out.

  3. I’m transitioning off of very strict keto (20 total grams of carbs per day, not net carbs) and my dietitian recommended these for me to start adding carbs of fiber to my diet. I haven’t eaten pasta in six months and LOVE Healthy Noodle. I eat it several times a week now with beef and marinara and it’s my favorite dish.

  4. In answer to your question, I’ve tried some of the competitor’s low carb or no carb noodles and they had a fishy odor. I didn’t like them at all. I think people who are more used to fishy diets probably don’t mind. Fortunately for me I didn’t find the softer texture to be an issue. I will be buying Healthy Noodle and alternating them with zucchini noodles and spaghetti squash.

  5. I enjoy them. The texture is like overcooked pasta. use it as you would regular pasta. In fact, I am eating them right now with real parmesan cheese, peas, and olive oil. they are good. should be rinsed before heating or adding sauce.

  6. I left the noodles unrefrigerated for a day , then refrigerated and have not opened yet. I’m unfamiliar with the ingredients and wonder if they are safe or if I should throw out. Any advice?

  7. I have a great solution for the texture issue! I rinse these well, then dry pan fry them in a non-stick skillet. Can even add a little olive oil at the end. They dry out really well, hold their firmness and are amazing as a healthy, low carb substitute in every dish we’ve tried so far. Problem for me is availability. I bought them while vacationing in New England but my Costco in Colorado Springs doesn’t carry them. 🙁

  9. Costco healthy noodle were perfect for my super quick low calorie pad thai recipe. The texture isn’t weird at all, no smell and its super healthy. Just add some readymade pad thai sauce, ginger+garlic, spring onions, julienne carrots maybe ground chicken/turkey and voila! Super great for an acceptable or even good tasting calorie deficient diet!

  10. I have tried many of these kind of noodles. Most of them have a horrible odor. These do not and they take on the flavor of whatever you put on them. But they’re a great quick meal and I love them.

  12. I have enjoyed Healthy Noodles many times in several types of dishes from curries to soups. I most recently used them in chicken noodle soup by first making a flavorful soup and adding the noodles just before serving. It was delicious.

  13. I agree that these are NOT marinara material … nor good for most noodle recipes. The texture is much too soft. But these noodles are absolutely FANTASTIC when done in a pho-style soup. I had them tonight: noodles in beef stock, thin sliced pork, sauteed mushroom, red pepper and spinach. A soft boiled egg … topped with sliced green onion. So satisfying.

  14. I love Healthy Noodles!! My son has Diabetes 1 and Healthy Noodles are so great for him because of low Carbohydrates !! We are always hunting 0 or very low carbohydrates food to satisfy his hunger. We cook them with all kind of sauces.
    It is sad that an employee of Cotsco informed to me that they are out of it and they are not thinking to refill it. No more Healthy Noodles at Costco?? I hope he is wrong!!

  15. I love these noodles. My local Costco also told me they going to stop carrying them. Very sad. The best way to prepare: Drain, wrap in paper towels, and squeeze out as much liquid as possible. Lay noodles on parchment-lined cookie sheet (1sheet per pouch), and place in oven on low (250) heat with door cracked open. I usually do two or three packs at a time. Let dry about 30-45 minutes. Perfect for homemade ramen!

  16. I have been on a diet and have cut out bad carbs (pasta, rice, etc.) these noodles are the bomb if you follow the directions. Are they like a regular pasta noodle, no, but if you have been craving pasta or Asian noodle dishes this product hits the spot. I am hoping and praying I find these at my local Costco because I’m now a huge fan!

  17. This product was just recommended at my WW meeting. In previous generations of this product, the liquid in which it was packaged had an odor. The new variant has been improved and does not have an odor. Recommendations for serving: put in colander, rinse with cold water, then switch to hot and heat until ready to serve. Only 1 point per serving. I can’t wait to try.

  18. I love these noodles. On a keto diet, and have been for 7 months, and these are the best low carb noodles there are. I use kelp noodles too sometimes. One thing is you can’t treat them as a regular noodle. You can warm them but don’t cook them. I use them for Pad Thai. Would definitely use them again. They do need to be refrigerated, while many konjac noodles do not, but not a big deal.

  19. My wife and I love these Healthy Noodles. Tastes just like pasta and the flavor is enhanced from our choice of Gravy (Italian for Sauce) that we put over them. Add a few meatballs and sausage and you have an excellent meal.

This product is great for those that are diabetic young & old as well as those trying to lose weight etc. It’s great in Asian curries, excellent in Vietnamese chicken or beef pho as an alternative to the high carb rice noodles traditionally used. What do people expect, it’s not the real rice noodle but it’s something that’s close enough. They work well in stir-fry with soy sauce and some chili crunch and garlic etc. Much more tender than the traditional pho noodle but it satisfied the hunger! I bought 1 box and everyone from my young teens to their dad enjoyed it very much as we are all trying to make healthier choices. I went back to buy more a week later and there wasn’t any until last week. I ended up buying 6 boxes because my teens loved it so much as opposed to other low carb noodles. We shop at your Las Vegas Summerlin location. Please continue to carry this product, it’s great!!! I plan on making pho for my friends who are also watching their carb intake.

  21. I am very picky about textures and smells. These are the first low carb noodles that I have found that I can eat! I froze mine, so I take one pack at a time out to use and rinse in hot water. It takes on the flavor of whatever I put them in. I’m worried I won’t be able to get them anymore. They were out of them the last time I went.

  22. We have tried these noodles and love them. They are pricey but when trying to eat healthy and loose weight I crave pasta and these were wonderful. Made a chicken stir fry with them and spaghetti. Both were good. Mine have not had any odor or have turned to mush. Only complaint is they are expensive but what isn’t nowadays.

  23. This review was useless. Anyone comparing these to real pasta is missing the point. Hundreds of thousands of people should be cutting their carbs because of the diabetes pandemic. Many of us no longer eat wheat or grain pasta, and for us shirataki noodles are a godsend. Of all the brands out there, and I’ve tried them all, these are the very best. Livia is a close second at almost three times the Costco price.

    These have a neutral flavor that takes on the flavors of the sauce very well, and I use them in stir frys, and under pasta sauce or cheese sauces. I have to travel 30 miles to buy them, in multiples for sure, and they take up major space in the fridge, but they are totally worth it. If this is your first time trying an alternative noodle, try Miracle noodles or any of the shirataki noodles available in the refrigerator section of the market first. I see them everywhere at around $3 a pack.

    Try them. And if you think, like me, that the pleasure of a healthy noodle with zero glycemic impact is a damn good idea, them you can try Healthy Noodle. What have you got to lose? Costco’s generous policy will let you return them if it’s a no-go. I just wish every market sold them, but I’m grateful Costco does at an affordable price!

  24. 1. Closest Costco is 100 miles away, so when we go we stock up. Bought the Healthy Noodles on a whim with the idea of a low calorie, low carb noodle too good to pass up. We froze them right away without knowing it was not recommended.
    2. We just thawed, rinsed and cooked as a side dish with onion, hoison, garlic, Sriracha and soy. We loved them.
    3. I tried Miracle Noodles several years ago, they smelled bad and no matter what I combined them with, I had the same gag response you described. Nothing like that with these Noodles.

    I’m super excited about these, which is how I found your review. Next time I will try without freezing and see if there is a difference…but freezing didn’t hurt.

  25. With respect, and despite the fact that you acknowledge multiple times that you are not the target for this product, you are completely missing the point.

    Many people do not have the option you have: to eat whichever pasta tastes great to you.

    These are a substitute. Diabetics and obese people who want to be as healthy as possible, are either forced to eat a substitute, or willing to eat a substitute for the health benefit.

    The very fact that you did not understand why “odorless” was one of the bullet points, shows that you were not qualified to do this review.

    Had you said that you’ve tried at least 2 or 3 other ketogenic/low carb type noodles, your entire article would be different.

    Finally as a huge tip to anyone who is trying any type of konjac based noodle (this one, Miracle, shirataki, House Foods, etc)…. After you rinse well, you MUST dry out the noodles if you’re using them in any non-soup application. The easiest way is to toss them into a large non-stick skillet and let them steam away (on any temp.) while you go about your business. You can toss them occasionally, and observe. They will not burn. If they start go get TOO dried they will start to look shriveled, so stop if you see a few shriveled ones. Once you don’t see any moisture in the bottom of the pan, or any boiling from within the clear noodles themselves….ADD a fat and some seasoning. A seasoned fat…some healthy oil, some garlic powder/onion powder. Fish sauce, soy sauce, mushroom powder, oyster sauce, powdered chicken bullion, seasoning packets, etc. Use flavors that will “go” with whatever dish you’re making. Taste. Once you get them to having a flavor, you can use them in a dish right away, or store them to use throughout the week. However, they will ALWAYS taste best stirred in…these are not good if you just try to “throw some jarred marinade” on top. Left overs are often the best…it gives those noodles that you dried, plenty of time to absorb all the flavors of your dish. If you make ahead, you’ll enjoy them the very most.

    To this reviewer…please. Sometimes it’s best to know that you’re not qualified. What you clearly showed everybody is this…konjac noodles are not very good “right out of the package” for people who aren’t willing to prepare them properly. Like many things, you need to learn how to use/cook them to make them delicious.

    I’m sorry if I sound arrogant, but I would hate for someone who NEEDS to find a substitute, just cancel these off their list after reading this review.

  26. I am a diabetic and gastric bypass patient. absolutely love healthy noodles. they do not raise my blood sugar and I can eat pasta – love it with shrimp and alfredo, meatball and cheese.

  27. I tried Healthy Noodle for the first time tonight. By far my favorite. I am not a fan of the odor with competitor’s noodles and I have tried a bunch. The texture was much nicer and not rubbery like the others. I sautéed some tofu in a peanut sauce and added the noodles until coated. They were perfect! I am disappointed that they are not more widely available. I figure Costco will probably stop carrying them because I like them.

  28. I love Healthy Noodles. Like other commenters, I typically use them in asian foods. I am making a Christmas pho and just realized that I don’t have any noodles. Yikes. Heading to Costco tomorrow to pick up another box.

  29. I’m getting ready to prepare Healthy Noodles with a meat sauce. The texture actually works perfectly for me as I always liked my pasta in a way most people would think was overcooked. The “odorless” feature is a big deal as the other pasta substitutes smell awful!

  30. So misleading this packaging! “Versatile and ready to use” yeah it’s “versatile” because they are plain and you can do whatever to them because they are simply wet noodles for $16. Very disappointed and overpriced! Should say “other ingredients not included” I would rather safe my money and take the 5 mins needed to boil my own noodles thank you. A lot more eco friendly too.

    1. These Miracle noodles are for people who cannot eat carbs like diabetics or people on keto diets. Not fair to compare to regular pasta.

  33. I will be devastated if Costco stops carrying these noodles. I love them. I put them in my wok and combine with stir fry veggies and tofu. It us fabulous. I also serve them at all of our Italian meals for those gluten free or watching calories. They are delicious. Just when Ithe pasta is almost done, I put healthy noodles in a colander and rinse them and warm them in the pasta water for a minute or so and then drain and put them in a bowl. They are excellent. I pray they are still available somewhere. Note: if someone has a gluten allergy I would do it in separate water!
