I purchased 2 blocks of pecorino Romano cheese at Costco, put it in the fridge for 2 days, when I got it out to grind this morning,, it was soft and extremely oily, when you ran a knife down the sides the oil ran off. Is this safe to eat….This never happened before.

definitetly safe, in italy its not even referigarted. Its sold like that it is cheese fat. As long as you dont see mold you are fine. If you see mold just remove it.
