I bought a Kirkland Swift rack of pork from Costco several years ago that was tender and delicious. I always do a reverse sear method (250 in the oven to 140, rest, then finish @ 500 for about 7-10 minutes) I’m an advanced home cook so I know what I’m doing.
I bought 3 of these racks of pork from Costco this holiday and froze 2 of them. We just finished our New Years dinner, and the pork was as tough as a boot and not good at all. Will never purchase again and the other two in the freezer are going back.

To the person that said I was tough as a boot, you over-cooked it. It was already beyond done when you took it out @ 140. Another 7-10 minutes @ 500 totally killed it. I’ve made at least 10 of these, and they always come out amazing. Here’s how:
Coat the whole thing liberally with kosher salt and coarse cracked pepper.
Sear fat side for 2 minutes in a heavy cast iron skillet (fits perfectly in a 12″ Lodge?
Flip over and place skillet in 450* oven for 10 minutes.
Reduce heat to 300 and roast for another 20-25 minutes. Remove @ 135 internal temp, tent with foil, and rest for 10 minutes.
Make a pan sauce with the drippings, carve, and serve with sides (green beans and duck fat potatoes are two of my favorites).
This has been a hit every single time I have made it, and the leftover ribs (rarely) anre great after a quick saute in some butter.

Don’t blame the roast because you screwed it up.
